The first two batches sent to stainless steel dimple plate tanks (95%) and a slow cool fermentation. The third into a 600-litre new French oak puncheon and fermented naturally. Then aged separately on fine lees (Sur Lie) for 5 months, then blended together and put back into stainless steel tanks and the oak puncheon to age for another 2 months before fining and filtering and being bottled. The ageing on lees gives the wine depth and structure.
