LIGHTFOOT & WOLFVILLE ANCIENNE CHARDONNAY 750ML

This wine is produced by an artisanal producer that is certified organic by Ecocert Canada and biodynamic by Demeter Certified Canada. It features low intervention winemaking techniques and comes from the single-vineyard Lightfoot Home Farm Vineyard located in Wolfville, Nova Scotia. The grapes are hand-harvested and hand-sorted, then pressed whole-cluster. Fermentation occurs with indigenous yeasts in mostly used French oak barrels, comprising 7% new, 25% second fill, 21% third fill, and 37% fourth fill or older. The wine undergoes 21 months of aging in barrel with a slow malolactic conversion lasting eight months. Tasting notes reveal aromas of lemon crème brûlée, white nectarine, and apple blossom, while the palate showcases a richness balanced with freshness, featuring a textured, stony grip that demonstrates grace and balance.
