100% Aligoté is a family winery established in 1992, known for its artisanal production methods and commitment to organic viticulture. The winery utilizes home-produced composts, environmentally-friendly phytosanitary products, and plowing techniques to maintain a carefully preserved biological balance in the soil. Located in the renowned commune of Meursault in the Côte d’Or, the Aligoté vines were originally planted in 1929 and again in 1948 by Joseph Boillot, who was the grandfather of François Mikulski. The grapes are hand-harvested with limited extraction and aged on lees in tanks, resulting in a wine characterized by flavors of green apple, citrus, peach, pear, and almonds. It offers a fresh texture and finesse, culminating in a spiced pear finish.
