This wine envelops the palate with a dense structure, toasted oak, fine tannins, and flavors of red plum, culminating in a long, persistent finish. It pairs beautifully with braised Angus beef short ribs in a red wine reduction, seared duck breast with herbed brown butter sauce, Dijon mustard and thyme-rubbed lamb, roasted beets, morel mushrooms, and both firm cheeses like aged Cheddar or Fontina as well as raw cheeses such as Gruyere or Comté.
